Since taking over formel B in 2003, our driving force has been to create dining experiences in free and relaxed surroundings – where great food and wine are allowed to speak for themselves.
For us, a memorable dining experience is all about hospitality and presence. About making every guest feel truly welcome. About creating a sense that we are here for them – and not the other way around. Exactly as we prefer it ourselves when we go out to eat.
Our love for classic French cuisine – with its uncompromising focus on flavour, exceptional ingredients, and refined sauces – has been with us from the very beginning and continues to shape everything we do.
That approach has followed us each time we’ve opened a new restaurant in Copenhagen or around Zealand.
Today, formel B Group encompasses seven restaurants – each with its own expression, yet all sharing the same high ambition.
The Michelin-starred formel B on Vesterbrogade in Copenhagen is where it all began.
From here, our story and DNA have evolved.
We’ve been fortunate to have such talented people in both the kitchen and front of house that our family of restaurants has grown – often with former team members as co-owners: the award-winning Palægade, serving both smørrebrød and dinner in the heart of Copenhagen; Sletten, with sea views over Humlebæk harbour; and the more laid-back Uformel in Studiestræde.
Then there’s our summer destination, LILLERO & Restaurant lilleB, beautifully situated between forest and sea at Høve Strand – where nature, tranquillity, and gastronomy come together in a unique glamping setting.
We also welcome guests to our intimate private dining venue, Chambre, near City Hall Square, and most recently to Restaurant Glassalen in Tivoli Gardens – where history, design, and gastronomy merge into one unique experience.
Simple and honest – all the way through
At formel B and across all our restaurants, we strive for the honesty that lies in simplicity.
It’s about creating something remarkable with as little as possible – letting the ingredients stand clearly on their own, pure and uncomplicated.
When a few elements are perfectly combined, something greater than the sum of its parts emerges.
To us, a dish is only complete when it doesn’t need anything more.
That’s why you’ll find clarity and restraint on the plate – no matter which of our restaurants you visit.
It’s a conscious choice we make again and again: to give space to flavour and let the essence of the food shine through.
The same philosophy shapes the aesthetics of our restaurants.
Each space has its own character, yet all share the same values: the design should support the meal – never distract from it.
The rooms are warm, simple, and inviting.
Materials are carefully chosen, and quality is evident in everything from the chairs to the napkins.
Most importantly, it should feel calm and comfortable to be here.
